I had a nanny who used to cook this chicken for me, and I was really craving it, so I recreated her recipe.
Steps

Boil the chicken breast with a quarter of the onion and some salt.

When the chicken is almost cooked, add the guajillo chiles to the pot.

Roast the tomato, the remaining onion, and the garlic clove.

Blend the guajillo chiles, chipotle chile, onion, garlic, peanuts, and some of the chicken broth until smooth.

Pour the mixture into a pot and season with salt.

When it comes to a boil, add the chicken. I like to shred it, but you can leave it whole if you prefer.

Serve with white rice.
