Ingredients

30 mins
2 people
  • 1/2 cupbulgur wheat (dry), cooked then cooled down,
  • 1medium egg, beaten,
  • 2level tbsp plain flour,
  • 60 gfeta cheese, cubed,
  • 1/2yellow bell pepper, diced finely,
  • 2 handfulschopped parsley,
  • 1/2 tspgarlic purée,
  • 1 tspra's el hanout seasoning,
  • 1/4 tspchilli flakes,
  • Salt and pepper to season,
  • Vegetable oil for shallow frying or spray oil
  • Fresh lemon juice and a few parsley leaves to serve (optional)

Steps

  1. 1

    Add a thin layer of oil to a large frying pan or skillet and begin heating it up over a medium heat. Whilst that heats up take a large bowl and add in the bulgur wheat.

  2. 2

    Add in the chopped parsley, the ra's el hanout, chilli flakes and season with plenty of salt and pepper. Next add in the chopped pepper and feta. Mix through gently to combine the ingredients.

  3. 3

    Lastly add in the flour and beaten egg and stir until everything is well mixed and the texture becomes thick enough to form patties.

  4. 4

    The oil in the pan should now be nice and hot. Wet your hands then take some of the mixture and form into a pattie. Place the patties into the pan and squish down gently. Fry for a few minutes on each side until cooked through and golden.

  5. 5

    Remove then lay upon kitchen towel to remove excess oil. Serve up and squeeze over lemon juice and garnish with a few extra parsley leaves. Perfect with a lovely salad or some veggies. I had these with some honey glazed roasted carrots with fennel (see next recipe for details).
