Sooji Poha Cheela (Poha and Semolina Dosa) - A great breakfast recipe. A quick dish to make for breakfast or after school snack. These cheelas are instant breakfast or evening snack option with not much of work in it. A great instant dosa recipe. This batter can be used immediately to make cheela or can be prepared ahead and refrigerated for 2 to 3 days. If looking for a vegan version, skip yogurt and use water. If you prefer a spicier version, you could add finely chopped onions and green chillies. You can also add some grated carrot to it to make it healthy and colorful. This is a kid friendly snack, so I have left them out. Serve these cheelas with chutney and sambhar to make it a wholesome and tasty meal.

Rinse the poha with water and drain.

Add the poha to yogurt. Mix well and let it soak in yogurt for about 5 minutes or until it softens.

Add poha-yogurt mixture and little water to a blender and blend to a smooth paste.

Add semolina, salt and water and pulse enough just to mix. Buttermilk can be substituted for water.

At this stage you can add grated carrot, finely chopped onions and green chillies and mix well.

Heat a non stick pan. When hot enough, pour 1/4 cup batter at the center and spread it out as much as possible. Spray oil around the edges. Cook until the bottom side turns brown. Flip it and cook on the other side too.

Transfer the cheela on to a plate and serve hot with chutney and sambhar.
