This recipe is one of my favorite recipe & also this is how I make my baigan Bharta.
Steps

Take two medium-sized eggplants; give a slit & embed garlic. Roast it on high flame apply some oil.

Keep turning the eggplant so it is evenly cooked, roast till the eggplant becomes soft.

Peel the skin from roasted eggplant.

Chop the cooked eggplant finely.

In a Kadai add mustard oil. When the oil is hot add onions gingers & saute well till it transplant.

Add green chili, turmeric powder, red chili powder & salt to taste & saute well.

Add tomato & mashed eggplant & cook for 2-3 minutes.

Garnish with chopped coriander leaves.
- 9
Serve hot with roti or paratha.
