First prepare Chettinad biryani masala. For that grind all spices mentioned in for ' Chettinad biryani masala ' in mixer grinder and make coarse powder. Grind garlic cloves, ginger and green chillies and make paste.

Wash and soak rice in water for 20-30 minutes.

In a small pressure cooker heat ghee and oil. Add bay leaf and cumin seeds. Add kalpasi. (Kalpasi is not available at my place. So I didn't use it). Add chopped onion, tomato and chilli ginger garlic paste. Saute till onion turns translucent.

Add prepared Chettinad biryani masala, turmeric powder and red chili powder. Mix well. Add green peas, chopped french beans, carrot and potato. Mix well and cook for about 2-3 minutes.

Now add soaked rice (without water) and saute for sometimes. Add chopped pudina leaves, coriander leaves and curd. Mix well.

Add coconut milk and water. Add salt and mix well. Cover with lid and cook until 3-4 whistles. Tempting Chettinad biryani is ready to serve. Serve with curd or any raita.
