Lucky Shaoxing Drunken Shrimp

Preparing dishes for Lunar New Year can be a big project, especially if you're working alone. It's best to plan ahead so you don't feel rushed. Including 2-3 cold appetizers in your menu that can be made 2-3 days in advance will help lighten your workload on New Year's Eve.

Shaoxing Drunken Shrimp is a must-have cold dish in our family every year. Simply blanch fresh shrimp, then marinate them in a Shaoxing wine and Chinese herb sauce for 2-3 days. The result is shrimp with a wonderful wine aroma and a firm, bouncy texture.

I recommend making Shaoxing Drunken Chicken at the same time. Use the chicken broth left over from steaming chicken thighs as the base for the marinade. Boil the marinade ingredients together, let it cool, and use it to marinate both the shrimp and the chicken. This way, you can prepare two dishes at once. When it's time to serve, just plate them and enjoy a delicious and impressive meal with ease. Hope this helps you with your holiday cooking!

Ingredients

30 minutes
Serves 4 servings
  • 300 grams(about 10.5 oz) large shrimp (shell-on, head-on preferred)
  • 3 slicesfresh ginger
  • 1scallion (cut into sections)
  • 1 tablespoon (15 ml)rice wine
  • Shaoxing Drunken Shrimp Marinade A:
  • 3/4 cup (200 ml)chicken broth
  • 1 slice(3-5 grams) angelica root (dang gui)
  • 5dried red dates
  • 1-2 teaspoonssalt
  • 1-2 teaspoonssugar
  • Shaoxing Drunken Shrimp Marinade B:
  • 3/4 cup (200 ml)aged Shaoxing wine
  • 1 tablespoon(about 10 grams) goji berries
  • 1large bowl ice water with salt

Steps

30 minutes
  1. 1

    Bring a pot of water to a boil with the ginger slices and scallion sections. Add the shrimp (with sharp points and long whiskers trimmed, and veins removed) and cook until they curl into a 'U' shape. Remove immediately.

    Transfer the shrimp to a large bowl of ice water with salt to chill, then drain well.

    For Marinade A, bring the chicken broth, angelica root, red dates, salt, and sugar to a boil. Turn off the heat, add Marinade B ingredients (Shaoxing wine and goji berries), cover, and let steep for 5 minutes. Let the marinade cool completely. Add the blanched shrimp to the marinade, cover, and refrigerate for at least 1 day.
