Cut the bacon and chorizo into medium-sized cubes.

Do the same with the onion, carrot, and bell peppers.

Heat a skillet over high heat and add the bacon and chorizo. Let them cook until they release their fat and turn golden. Remove them from the skillet and set aside on a plate.

In the same skillet, using the fat from the meat (add a splash of olive oil if it’s dry), add the carrot and onion. Sauté for about 2 minutes, then add the bell peppers. Stir well.

Let everything brown lightly, add a little salt, and return the meat mixture to the skillet. Add a splash of Tabasco sauce and mix well.

Add the can of black beans with its liquid. Stir to combine, reduce the heat to low, cover, and cook for 8–10 minutes. Add water if needed to keep the mixture moist.

Serve hot with white rice and garnish generously with chopped parsley. Enjoy!

If you want to use fresh chili pepper, you can add it along with the bell peppers. Be sure to chop it very finely.
