First, clean the mustard greens, spinach, and bathua. Wash them thoroughly and chop them finely.

Place a pressure cooker on the stove, add 2 cups (about 480 ml) of water, and add the chopped greens. Add salt, half the ginger (grated), and green chilies. Cook on low heat for 2 hours. The longer you cook the greens, the tastier the saag will be. Once cooked, blend the greens until smooth.

Add the whole wheat flour to the saag and blend again. Close the pressure cooker and cook for 3 whistles.

For the tempering, finely chop the onions, garlic, ginger, and green onion. Make a slit in the green chilies. Heat mustard oil in a pan, then add the onions, garlic, green onion, ginger, and green chilies. Sauté until golden. Add tomato puree and cook the masala until oil separates. Then add the blended saag. Add garam masala and jaggery (or brown sugar).

Cook for a few more minutes. The saag is now ready. Add butter when serving.

To make Makki Ki Roti, knead the cornmeal with hot water to make a soft dough. Take a portion of dough and shape it into a ball, then flatten it into a disc.

Heat a griddle (tawa) and cook the roti on both sides until golden brown. Serve hot with the saag.
