Ingredients

Serves 4 servings
  1. 1pie crust
  2. 1/2onion, finely chopped
  3. 1 cuppotatoes, diced (about 150 grams)
  4. 1 cupcarrots, finely chopped (about 130 grams)
  5. 1 clovegarlic, minced
  6. 12 ouncesbeef stew meat, cubed (340 grams)
  7. Olive oil
  8. Salt
  9. Pepper
  10. Dried thyme
  11. 1 1/3 cupsbeef broth (about 315 ml)
  12. 2 tablespoonscornstarch (or flour) (about 15 grams)
  13. 1/4 cupcold water (about 60 ml)

Steps

  1. 1

    Heat olive oil in a skillet. Add the beef cubes, salt, and pepper, and brown the meat. When browned, add the onion. Cook for 1 to 2 more minutes.

    Add the carrots, garlic, potatoes, thyme, and beef broth. Bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender when pierced with a fork.

  3. 3

    Mix the cornstarch and cold water together. Pour into the beef, vegetable, and broth mixture to thicken. Stir until the mixture is thickened. Remove from heat and pour into your oven-safe baking dish. I used a round Pyrex dish.

    Preheat your oven to 400°F (200°C). Cover the dish with the pie crust. Bake for 25 minutes.

    Let rest for about 10 minutes before serving.
