Any root vegetables or quantity can be roasted together but make sure that they are cut to similar sizes otherwise the vegetables won't cook evenly.

Any root vegetables or quantity can be roasted together but make sure that they are cut to similar sizes otherwise the vegetables won't cook evenly.

Ingredients

  1. 1onion, cut into wedges
  2. Fennel, cut into wedges
  3. piecesCarrots, peeled and cut into bite size
  4. piecesParsnips, peeled and cut into bite size
  5. halfChestnut Mushrooms, cut in
  6. Salt to taste
  7. Olive oil
  8. 1couple of sprigs of fresh thyme or 1 tsp or dried thyme

Cooking Instructions

    Preheat oven to 180c.

    Toss the vegetables together in a bowl with a drizzle of olive oil (Not alot just enough to coat the vegetables).

    Toss the vegetables into an oven proof tray. Sprinkle with thyme and salt.

    Roast for 25-30 minutes covered with foil.

  5. 5

    Then remove foil and continue to roast uncovered for another 25-30 minutes or until all the vegetables are cooked through. Shake the pan occasionally to stop the vegetables from sticking or burning.
