4carrots
4parsnips
1large sweet potato
3potatoes
3 tbspolive oil
1/2 tspsalt
1/4 tspblack pepper
Fresh or dried herbs (parsley,rosemary or thyme)

Preheat oven 425°F

Cut veggies into similarly sized pieces

Place veggie onto single layer baking sheet

Drizzle with oil

Toss well to coat pieces

Add salt and pepper and herbs

Roast 25 to 30 minutes until all veggies are tender
