Ingredients

2-3sweet potatoes, cut into chunks
2lbs. Brussel sprouts, cut in hald
1-2lbs. Beets, cut in half
1-2 lbsturnips, cut in half
1-2large parsnips, cut into chunks
1large head of garlic, cut in half
1/2 cupolive oil
to tasteSalt and pepper
Few sprigs of fresh thyme
1/2lemon

Place cut veggies into a large bowl and combine

And olive oil, lemon juice and fresh time

Roast veggies until tender about 1 1/2 hrs. ENJOY
