I first discovered this dipping sauce when my foster parents served it with salt-steamed chicken. It was so delicious that I still remember it to this day!

Wash and finely chop all the ingredients.

Wash the kaffir lime leaves, shake off excess water, stack them, roll them up, and slice thinly.

Add the ginger, garlic, lemongrass, and shallot to a hot pan with the chicken fat rendered from boiling the chicken. If you don't have chicken fat, you can use olive oil instead. Sauté for about 1 minute or until fragrant and the ingredients start to turn slightly golden, then add the green onions and kaffir lime leaves and sauté for another 30 seconds.

Add the sugar, salt, and hot water, and stir-fry for about 20 seconds, then turn off the heat.

Taste and adjust seasoning if needed. Serve as a dipping sauce with boiled chicken for an amazing flavor.
