Apple and Banana Pound Cake Made with Pancake Mix

I wanted to use up some leftover apple and bananas. I didn't want to use a frying pan, so I heated the apple in the microwave. I referred to other pound cake recipes when I was making this. I tried making it with no added sugar so my small children could enjoy it.

Peel the apple and slice into thin wedges. Microwave at 500 W for 3 and 1/2 minutes, then let it cool down.

Mash the banana. I slice it thinly before mashing it.

Put the apple, banana, margarine, egg and pancake mix into a bowl in that order, and mix. Preheat the oven to 180℃.

Pour the batter into a tin lined with parchment paper, and bake for 35-40 minutes at 180℃.

Check on it while it's baking, and cover with foil after around 25-30 minutes.

It's done when a skewer poked through the middle comes out clean. Bake for a little longer if necessary.

Cover it with a moist cloth, and slice it when cooled. It might be tastier if you leave it a day before eating.
