Yum! Crispy on the edges and gooey in the middle, great for peanut butter lovers and cookies alike.

Gently melt the butter and peanut butter on a low heat in a saucepan. Let cool slightly and add the egg and whisk until combined. Add the dry ingredients sieved and mix until you reach a toffee like consistency. Leave in the fridge for 30 minutes or in the freezer for 15 minutes. Pre-heat your oven at 180 C.

To the dough add the chopped toasted monkey nuts and the chocolate and shape 6 balls of 70 g each. You can shape more of a lighter weight if preferred. Place them on a baking tray with some gap between them as they will expand. Bake for 15 min or until golden and crisp around the edges. Let cool the cookies down completely and then spread the salted caramel and top with more chopped chocolate and monkey nuts.
