I love arugula, and my dad grows it just for me! It makes me proud to have this special treat all to myself. From the first moment I smelled those carefully picked bunches, I forgot all about the arugula I used to buy at the store! Maybe it's the freshness, maybe it's the unique soil, or maybe it's the extra love that goes into it, but my dad's garden arugula just tastes so much better! Before making pesto with it, I hesitated because I thought it might turn out bitter. But when I finally tried it, I realized I was wrong! It's delicate, fresh, and everyone loves it. Most of all, it's super versatile!

Ingredients

5 minutes
  • 3 1/2 cupsarugula, washed and dried (about 100 grams)
  • 2 tablespoonsalmonds (about 15 grams)
  • 2 tablespoonshazelnuts (about 15 grams)
  • 1/2 cupgrated Parmesan or Grana Padano cheese (about 50 grams)
  • 1/3 cupextra virgin olive oil (80 ml)
  • Salt and pepper, to taste

    Wash the arugula thoroughly and dry it well by laying it on a cotton towel and patting it with paper towels.

  2. 2

    Place the washed and dried arugula in a tall container suitable for an immersion blender. Add the almonds, hazelnuts, and grated cheese.

  3. 3

    Start blending, slowly drizzling in the olive oil while moving the immersion blender up and down in short bursts. This helps prevent the blades from heating up and changing the flavor of the pesto.

  4. 4

    Once you reach your desired consistency, season with salt and a grind of pepper. Mix well so the pesto is evenly seasoned.

  5. 5

    Your fresh and aromatic arugula pesto is ready to use! Enjoy it with pasta, on crunchy bruschetta, with cheese, as a topping for fish, or however you like.
