Palm Sugar Cheese Cookies

I made these last May to fill the cookie jars for Eid. It was my first time making them while feeling quite dizzy, just to satisfy my curiosity about these cookies that went viral some time ago. Even though I made them late, I was satisfied because it took effort, and they taste really delicious😍

Note:
°These cookies are fragile if you use only butter, but they melt in your mouth, so feel free to mix with margarine for a sturdier result. I used a 1:1 ratio, and the recipe below is written as originally intended.
°Use Edam cheese for a cheesier result. You can substitute with Parmesan or Cheddar. For Cheddar (grated), it's recommended to dry it overnight in the fridge in an open container.
°These cookies are a bit difficult to shape, so it's best to chill the dough in the fridge for 10 minutes before shaping.
°Don't make the dough pieces too large, as they will spread when baked.

Ingredients

45 minutes
1 large jar
  • 7 ozbutter
  • 1egg yolk
  • 2 ozEdam cheese, finely grated
  • 1 3/4 cupslow-protein flour (about 225 grams)
  • 3 tablespoonspowdered milk (1 sachet)
  • Palm sugar as needed for coating

Steps

45 minutes
  1. 1

    In a bowl, beat the butter and egg just until combined for 1 minute. I used a whisk.

    Add the cheese and mix well with a spatula.

    Add the flour and powdered milk, and mix until combined.

    Take about 1 teaspoon of dough, then roll into a ball or a long shape.

    Dip into palm sugar until the entire dough is covered.

    Place on a baking sheet greased with margarine or lined with baking paper. Make sure to leave space between each piece of dough.

    Bake for 45 minutes at 300°F (150°C) or until done. Adjust according to your oven, as I used a small oven with low heat. Once cooled, store in a jar.
