In a wok, add 1 tablespoon oil. After it heats, add cumin seeds, asafoetida, fennel seeds and coriander seeds. Roast them for a minute or two. Add a glass of water to this. Let it boil.

Now add baking soda and semolina gradually to the above water. Keep mixing it to avoid the formation of any lump. Mix it properly.

Make vada of the above mixture when it gets cooled down a bit as shown in the image.

Heat oil to deep fry this vada. Deep fry the vada till they turn crispy.

Boil water in another vessel. Soak vada in this water for 10 minutes and squeeze out the excess water. The vada are ready.

Now, arrange the vada in a plate. Pour both chutney, salt, black salt, red chilli powder, cumin powder, whisked curd on top and serve.
You can add tomato and cucumber cubes on top along with other ingredients.
