Marinate the beef slices with soy sauce, sweetener, and black pepper for 1 hour. (I used lean beef shank slices.)

Heat a pan, sauté the onion until fragrant, then add the marinated beef slices. Stir-fry until cooked through, then set aside.

While steaming the gua bao buns, prepare the peanut powder: Combine the peanut powder and monk fruit sweetener in a bag and mix well (use a 1:1 ratio).

To assemble, place a slice of cheese in the gua bao bun, add the beef, then top generously with peanut powder and cilantro.
