An easy peasy Breakfast or Dinner recipe that suits our Indian palate very well. This is made with blanched tomatoes and few Indian spices and is a perfect breakfast idea on any given day. Kids will absolutely love this and hence it can be a fabulous brunch idea too. In this particular one, I have also used Cabbage that goes along with Pasta or Spaghetti very well. And have made use of Cheese too. It's purely optional. You can add more or less of it as desired. That's it. All ready to be enjoyed with loved ones beside on any given day. It's a perfect one pot meal idea for the weekends too.

Steps

Boil Spaghetti al dente with little Salt and a teaspoon of Oil. Drain and set aside.

Bring water to a rolling boil. Add Tomatoes and cover. Keep them aside. Mash this blanched Tomatoes and use as the Sauce. Or store bought Tomato paste from Dabur can also be used. It's an amazing alternative.

Heat Oil in a cooking pot and saute the minced Garlic first. Add the chopped Onions to the pot now and saute until translucent. Also add sliced Capsicum along with Shredded Cabbage and the rest of the spices mentioned. Add the mashed Tomato pulp and mix well. Finally add the boiled Spaghetti and toss.

Also add Cheese as desired. Mix well. Cover and cook on a low heat just until it melts. Garnish with chopped Parsley or Coriander. Serve hot immediately.
