Boil rice,perfectly common side dish in every cusine for many meals.yet this is that one simple recipe where even great cooks got shaky.so many things can go wrong from simple washing till dishout.keeping few tips in mind will helps in seprate clear rice.washing of rice should be thorough.addition of vinegar helps in texture of rice.use of wide strainer last but not least choice of pot which should not be too small neither too big.I serve oil free boil rice in zero oil vegetarian thali.check out other zero oil recipes

Wash the rice under running tap water till the water runs clear.rice contains starch & simple thorow washing is a tip to remove starch & lessining stickyness. Soak rice according to rice type.I soak for 10 minutes

Boil water with salt & vinegar.sometimes I add mint leaves or green chilli for aroma.when water is boiling add drained rice.let them cook at medium flame

Check rice in between.when you find them 90% done.remove from heat.strain the water.(rice still kept cooking in steam).take wide strainer so that starchy water flows out completely.turn the rice upside down as well with flat spoon so as not to mush or break rice with pressure.

Keep hotplate(tawa) at medium flame for dum.Transfer rice again to pot.close the cover and put on for dum.first 5 minute high heat & then lower flame to low.wrap a towel or kitchen cloth over dish cover.

For serving,use a fork to gently mix & lift the rice first.I added chillies for colour. Fresh oil free khilly khilly rice are ready to serve with any meal.
