Add coconut, coriander to mixie. Grind it. In plate add grinded coconut, crushed peanuts, garam masala, red chilli powder, turmeric powder, coriander powder and salt to it. Mix and make masala for barwa baingan.
Cut brinjal in slit. - 2
Stuff masala in brinjals. Keep remaining masala aside.
Add oil to kadhai. Add cumin seeds, mustard seeds andasafoetida. After it crackels add brinjals to it. Cover it and let it cook in steam and oil for 5 - 7 minutes. - 3
Add remaining masala to it. Stir it for a minute and add hot water to it.
Let it cook for 10 minutes or till brinjal cooks, on low flame. Garnish with coriander.
Serve with jowar roti and buttermilk.
