First, you have to cut potatoes into small pieces. Then peel off parwal or Pointed Gourd and cut into long pieces.

Now, take a pan and add oil. As the oil heats, add jira and Asafoetida. Then add potatoes and salt to cook
Potatoes. Cover the pan with a plate of water and let the potatoes cook on medium flame for 6 to 8 minutes. Keep stirring the potatoes with a spatula to avoid burning. - 3
When the potatoes cook partly, add chilli- ginger paste and parwal pieces and salt to cook vegs. Now, put the plate of water on the pan again to cook pointed gourd pieces.

As parwal cooks partly, add turmeric powder, coriander cumin powder and red chilli powder and garam masala. Mix sabji and masalas properly.

Let the vegs cook for 1-2 minutes and turn off the gas flame. Finally, add fresh coriander leaves from the top to get good taste.
