Ingredients

  1. 1/2 cupgravy from oven-roasting chicken
  2. 6large potatoes
  3. 2 cupsboiled pigeon peas (mbaazi)
  4. 2large onions
  5. 2medium eggplants
  6. 1large courgette
  7. Enough milk for blending pigeon peas
  8. 1/2 teaspoonblack pepper
  9. 1/2 teaspooncurry powder
  10. 1/2 teaspoonmixed dried herbs
  11. To taste salt

Cooking Instructions

    Boil the potatoes with skin on and mash.

    Put as little milk as possible with the pigeon peas in a blender and blend to a smooth, thick liquid.

    Put the chicken gravy in a sufuria and fry the onions with it. It is very fatty.

  4. 4

    Add the rest of the chopped vegetables and season with pepper, herbs, and curry powder. Consider the seasoning in the chicken gravy.

    When the veggies have cooked down and the liquid reduced almost completely, mix all the components together. Check salt and correct.

    Serve hot. It is a complete meal. Maybe do with kachumbari or other salad for freshness component.
