Chicken Gravy and Biscuits

My mother in law taught me how to cook one of my husband's favorite comfort foods. I had never eaten anything like this before in my life. Not that it's unusual, but I've lived a very sheltered life.

We are a family of 6, so I make a rather large amount. We 💙 leftovers. This can be halved or done in the crock pot (with the thickening done at the end). It's also a versatile dish because you can use fresh chicken, leftover chicken, serve over rice, mashed potatoes, bread, or noodles. Our favorite, of course, is biscuits.

I hope you and yours enjoy this recipe. I'm open to feedback, good or bad. This is my first EVER recipe post. I hope to use this app to inspire me in my cooking and meal planning endeavors.

Ingredients

20 to 25 minute
8 to 10 Serving
  1. 3-4 cupscooked shredded chicken (I am using leftovers)
  2. 6-8 cupswater (enough to cover the chicken by about an inch)
  3. 6-8chicken bullion cubes (enough to match the cups of water)
  4. 1/2 teaspoondried chopped onion (or fresh, to taste)
  5. to tasteground black pepper
  6. To Thicken: 1 1/2 to 2 cups flour wisked with 3 to 4 cups water
  7. (Thicken as much or as little as you like)
  8. Refrigerated Biscuits (as many as you want to make)

Steps

20 to 25 minute
  1. 1

    Start by preheating the oven to the temperature recommended for the biscuits. Bake biscuits according to package directions in between steps.

    Place shredded chicken in pot. Add water, onion, bullion cubes, and pepper. Bring to a boil on medium high heat.

    Once boiling, add thickening mixture, stirring quickly so the flour mixture doesn't all clump together.

    Return to boiling. Stirring quite often. The chicken gravy should be thickening. You can add more thickening mixture if you like your gravy thicker. *my general rule is flour to water = 1 to 2 ratio.

    Once gravy is thickened to your liking, it's ready to serve. Garnish with more black pepper if you like. I don't add salt because there is plenty in the bullion cubes.

I cooked this last night for dinner and it was perfect. Using leftover rotisserie chicken and I added a can of green beans. Next time I’ll add fresh or frozen beans, but I may try peas instead.
This is a keeper.
