In a pan (with a lid for later), heat the oil and add the crushed garlic. Sauté for 2-3 mins.

Add the wet garlic and the leek. Sauté for 5-10 mins.

Add the potato. Sauté for about 2 mins. Add the stock so the vegetables are covered. Season. Bring to the boil. Reduce heat, put the lid on and simmer for about 15 mins.

Add the garlic leaves. Then blend in a blender or with a hand-held blender.

Squeeze in some lemon juice. And check the seasoning.

Pour the soup into bowls. Add a generous dollop of creme fraiche - stir it through or leave on the top. Sprinkle with lemon zest if using. Enjoy 😋
