This dessert has a dramatic story connected to Queen Shajar al-Durr, a former queen of Egypt. The reason for its name, Umm Ali, comes from this tale. After Umm Ali, the co-wife of Shajar al-Durr, ordered the palace maids to kill the queen with wooden clogs, they did as instructed. Umm Ali then entered the bath where the queen's body was and, in her anger, mutilated her. To celebrate, she ordered the cook to prepare a dessert and distribute it to those present. After the cook made the dessert and served it, Umm Ali added raisins to the bowls, symbolizing her victory. From that day, the dessert became known as Umm Ali, not after the cook who made it!

Ingredients

Serves 5 servings
  1. 25 ounces (700 grams)puff pastry (mille-feuille) cookies or croissants
  2. 4 1/4 cups (1000 grams)whole milk, freshly boiled
  3. 2 cups (500 grams)fresh whipped cream
  4. 2 cups (300 grams)roasted hazelnuts and almonds
  5. 1 cup (150 grams)raisins
  6. 2 1/2 cups (500 grams)sugar

Steps

  1. 1

    Break the puff pastry cookies or croissants into pieces by hand.

    Fill each baking dish halfway with the pastry pieces.

    Continue until all the baking dishes are filled with pastry.

    Roast the nuts, then roughly chop them using any method you prefer.

    After chopping, mix the nuts with the raisins, then add a reasonable amount on top of the pastry in each dish.

    After adding the nuts, add another layer of pastry to each dish, leaving about 3/4 inch (2 cm) of space at the top.

    Boil the milk with the sugar until well combined.

    Pour enough milk into each dish to cover the pastry layer.

    Whip the cream until stiff peaks form.

    Using a piping bag, add a full circular layer of whipped cream on top, almost reaching the edges of the dish.

    Bake in a preheated oven at 430°F (220°C) until the top is golden brown. You can also bake it in the microwave, watching carefully so the top doesn't burn.

    Once the top is browned as desired, garnish with anything that complements the dessert and dish color, such as a little leftover whipped cream, a sprinkle of pistachios, or a few raisins.
