Ingredients

  • 6spring onions
  • 4 tablespoonsbutter
  • 6 tablespoonsdry white wine or vermouth
  • 450 mLdouble cream
  • Freshly grated nutmeg
  • 225 gsmoked salmon
  • 2 tablespoonschopped fresh dill or 1 tablespoon dried dill
  • Freshly squeezed lemon juice
  • 450 gfarfalle
  • to tasteSalt and ground black pepper

Steps

  1. 1

    Slice the spring onions finely.

  2. 2

    Melt the butter in a saucepan and gently fried spring onions for one minute until softened

  3. 3

    Add the wine of the move and boil hard to reduce to about 2 tablespoons.

  4. 4

    Stir in the cream and salt, pepper and nutmeg to taste.

  5. 5

    Bring to the boil and simmer for 2 to 3 minutes until the sauce is slightly thickened

  6. 6

    Cut the smoked salmon into 1 inch squares and stir into the sauce with the deal.

  7. 7

    Taste and add a little lemon juice

  8. 8

    . Keep the sauce warm

  9. 9

    Cook the pasta in plenty of boiling salted water for 8 to 10 minutes or until al dente. Drain well. Toss the pasta with the sauce and serve immediately in warmed bowls
