Crush the cookies in a food processor or by hand and place them in a bowl. Melt the butter and add it to the cookies. Mix everything together and form the base in a 9-inch springform pan, flattening it with the back of a spoon. (I lined both the base and the sides with parchment paper...). Let it rest in the refrigerator for at least 30 minutes.

Soak the gelatin in cold water for 10 minutes.

Meanwhile, in a saucepan with high sides, combine the milk, cream, sugar, and flavorings, and bring everything to a boil.

When it reaches a boil, lower the heat, and after squeezing out the gelatin, add it to the milk and let it dissolve, continuing to stir.

Turn off the heat and let it cool slightly, then pour the mixture over the cookie base and place it in the fridge for at least 3 to 4 hours.

Decorate as desired. I spread a thin layer of berry jam.
