Steps

Preheat the oven to 160°C.

Separate the eggs. Use the egg whites for something else. I have a yummy pavlova recipe you can make. This recipe only uses the egg yolks.

In a bowl whisk the eggs yolks and white sugar.

In a pot heat the cream and vanilla essence. Bring to a boil.

Gently pour the hot cream into the egg yolks while continuously whisking.

Pour 150ml into each ramekin. Place the ramekins into a roasting pan.

Place the pan in the oven. Then pour tap water into the pan until it comes up to a height of 2/3 of the side of theramekin.

Bake for 45-60 minutes. It should be just set with only a small area of jiggle in the center.

Remove ramekins from pan and place into a ice bath. Place it into the fridge for at least 2 hours to set.

Sprinkle generously with castor sugar. Take a blowtorch and brulee the the sugar until caramelized.

Enjoy at room temperature.
