Chicken Fajitas

We love Mexican food and will generally get on a kick for the week of tacos, burritos, quesadillas, and fajitas. I love the variety in which you can make these fajitas! I am not a meat eater but the rest of my family is so I will usually make them chicken fajitas and myself zucchini fajitas. Sometimes I like to add a dash of tequila, Matt gets a kick out of lighting the tequila on fire... lol!

Ingredients

1 hr 30 mins
2 - 4 people
  • 1 TbsOlive Oil
  • 1 lbThin Sliced Chicken Breast
  • 1Red Pepper
  • 1Green Pepper
  • 1Large Sweet Onion
  • 1 PacketOrtega Fajita Seasoning (you could use a different one this is just our favorite)
  • 1/2Lime
  • 1 PackageFajita Soft Shell Tortillas (we use mission brand tortillas, the fajita size)
  • 1 BagSharp Shredded Cheese (or more if you are like my daughter and like to load them with cheese... lol)

Steps

  1. 1

    Slice chicken breast into strips.

  2. 2

    Add olive oil to a large skillet and add the sliced chicken and squeeze the fresh lime juice onto the chicken.

  3. 3

    While the chicken is cooking start slicing your peppers and onions into slices (if you want them to cook quicker slice them thin)

  4. 4

    Once the chicken is done remove from the skillet and add your peppers and onions. Cook until they are tender.

  5. 5

    When the peppers are done add the chicken back to the skillet and add the fajita seasoning packet. (You will need to add in a little water as well. The packet should tell you how much you need)

  6. 6

    As soon as the seasoning is mixed in well serve and enjoy! We usually serve with salsa, sour cream, and guacamole. You could always add in shredded lettuce.
