Crepes are loved by children.
But if you buy them, they are so expensive. If you make them at home you can have lots of fun cooking and they're cheap that's the best way.
Books often tell you to make a well in the middle of the dry ingredients and then add the egg. Actually if you do it the other way around and add the sifted dry ingredients to the liquids you'll get less lumps If you get rid of excess butter in the pan before cooking, you'll end up with a better crepe. Add the sugar and eggs to a bowl and mix until pale. Combine the milk and vanilla extract into the mixture.

Sift the cake flour and add it a little at a time to the mixture from Step 1. Strain the mixture once with a sieve to get rid of any lumps.

Melt the butter in the microwave and add it to the mixture. Mix until the mixture becomes glossy, cover the bowl with clingfilm and leave to rest for over 30 minutes.

Warm a frying pan and lightly grease with butter. Add just shy of a ladle full of mixture to the pan and turn the pan until the mixture has spread evenly. Cook on a medium heat for 1 minute.

Once the edges begin to peel away from the pan, use a palette knife or something similar to flip the crepe over and cook for a further 30 seconds before sliding it onto a plate.

Chcolate, Banana, Strawberry & Cream (by my daughter).

Top the crepe with whatever you like and they're ready to eat.

When making a milk crepe, increase the amount of milk by 50 ml for a softer crepe batter.
