I had a dear friend round for dinner last night after a long day at work and needed to make something fast, tasty and easy. This chicken dish practically cooked itself and the result was perfect!!

I had a dear friend round for dinner last night after a long day at work and needed to make something fast, tasty and easy. This chicken dish practically cooked itself and the result was perfect!!

Cut the onion into half moon slices, the lemon into 4 thick half moon slices and wash the garlic cloves without peeling them. Put the chicken pieces into a roasting dish. Stick the lemon, onions, garlics and bayleaves between the pieces.

Pour the wine over everything and add salt and pepper. Finally sprinkle the chilli flakes over the chicken. Don't be shy!! Put in the oven at 180°C for an hour or so depending on the size of the cuts of chicken

When it is done the onions and garlic will be soft and there will be a natural tangy and hot (if you were brave with the chilli flakes) gravy-like sauce.

Put the chicken on warm plates. Pour the sauce over them. Add the onions and garlic cloves and enjoy with a nice salad or steamed veg, the rest of that white wine and lots of friendly chatter 😊😊
