A great way to use up leftover lentils if you’ve cooked too many and don’t feel like eating them the usual way. Here’s a tasty and fun idea with just a few ingredients and lots of flavor.

Cook your lentils as usual, using a broth made with carrot, celery, onion, and a few rosemary needles.

Transfer the lentils to a tall mixing container. Add the oil, Parmesan, and flour, then blend everything together with an immersion blender.

If the mixture is too thick, add a little water to make it creamy.

Heat a nonstick skillet with a little oil. Pour in a ladleful of the mixture and cook for 3 to 4 minutes on each side, until well cooked and nicely crisped.

Serve with cured meats, cheese, or just enjoy them on their own—they’re delicious!
