Peel, chop, cook and mash potatoes. Leave to cool. Cook pancetta and mushrooms in a pan, no need for oil. Leave to cool

Preheat oven to 180. Add most of the egg to the potatoes, saving a tiny bit for glazing. Add mushrooms and pancetta. Mix well. Now chop the mozzarella and throw it in. Mix again

Season to taste. Roll out the pastry. Prick with a fork. Glaze with a little egg. Spread mixture evenly on top.

Using the parchment paper, roll up like a sausage. Glaze with remaining egg and snip with scissors. Bake for about 30 mins. Leave to cool a bit before serving
