I got lots of organic hassaku, so I tried to make some jam out of them.

Soak the rinds in a bowl of water for a while to lessen their bitterness.

  • 6Hassaku citrus
  • 600 gramsSugar
  • 200 mlWater

Steps

    Wash the hassaku clean with water.

    Peel off the hassaku rinds as thinly as possible.

    Julienne the rinds and soak them in a bowl of water for 3 to 6 hours. Change the water if you can during the middle of the soaking process.

    Set aside the hassaku fruit and juice.

  5. 5

    Place the rinds, fruit, juice, sugar and water in a pot and simmer. Once the rinds become translucent and the overall texture thickens, it's done!

    Pour the jam into sterilized jars.
