Easy Shiny Hassaku Jam

I got lots of organic hassaku, so I tried to make some jam out of them.
Soak the rinds in a bowl of water for a while to lessen their bitterness.
If you'd prefer your jam to be a bit more bitter, reduce the soaking time to 1-2 hours. Recipe by Daichantomame

Steps
- 1
Wash the hassaku clean with water.
- 2
Peel off the hassaku rinds as thinly as possible.
- 3
Julienne the rinds and soak them in a bowl of water for 3 to 6 hours. Change the water if you can during the middle of the soaking process.
- 4
Set aside the hassaku fruit and juice.
- 5
Place the rinds, fruit, juice, sugar and water in a pot and simmer. Once the rinds become translucent and the overall texture thickens, it's done!
- 6
Pour the jam into sterilized jars.
- 7
Look how beautiful and shiny the end result turned out to be!
