In a big bowl mix all the dry ingredients. Take carom seeds between your palms and rub it then add by this it will give a great taste and aroma to the dough.

Now add oil and mix very well in the flour mix then try to bind it between your fingers if it binds then is perfectly alright otherwise add some more oil. Then add water slowly and gradually and knead a soft, smooth but stiff dough. Knead it for a good 6-7 minutes. Then keep it aside for 15 minutes. Then make 2 equal size ball of it.

Don't add flour while rolling hence apply some oil on rolling board and rolli pin both. Then roll it into a thin disc. Roll it 1/8 inch thick. Now prick it with a fork or knife then cut it with a cookie cutter or anything you have.

I had flip over my cupcake mould and grease it and place the cut disc on top of it and pinch the sides to give a katori shape. You can bake it on either side also or you can bake in separate cupcake moulds also. Once all done then bake it in a preheated oven at 180°c for 20-25 minutes depending on the thickness of your katori. It will come out very easily once baked properly.

Once katoris are out of the oven then allow it to cool down. You can bake and store these katoris in an airtight container for upto 3-4 days on room temperature or for 8-10 days in refrigerator. Meanwhile let's prepare the filling. For that take a big bowl. Peel and cut the boiled potatoes in cubes and add it in the bowl.

Add all the ingredients of filling one by one and mix. You can add as many things as you like or whatever Veggies you like it's totally upto you. Once done taste it to adjust the taste and flavours. You can eat it as it is as a salad or while dieting or in a snack time with tea.

Once everything is done then start adding the filling to the baked baskets till the brim. Once done with all add some aloo bhujiya on top along with some yoghurt and green chutney accompanied with tamarind chutney and tomato sauce. As whatever you like upto your taste buds.
