Soak the urad daal overnight. Drain the water and add the lentil/daal in blender together with chili and ginger. The mixture should be fluffy in nature.whisk the mixture taking in a bowl and make a fine paste.

Take a deep wok with hot oil and take a ice-cream scooper and pull out a scoop from the wet mix and add one by one in the oil and golden fry the vadaa.

Take a bowl with warm water and add some salt. Soak the vadaas in it for about 30min. In another bowl whisk the yoghurt with salt and sugar so that there are no lumps formed.

Take the vadaas out of water and squeeze gently between palms and arrange in a bowl keeping side by side.Pour the yoghurt over it and layer with the coriander and tamarind chutney over it. Sprinkle some chaat masala and refrigerate sometime before eating. Enjoy the finger licking goodness anytime.
