Shio-koji Chicken Wings

I tried making chicken wings using shio-koji I got from my mother.
It's best if you use bleached cloth for the gauze, but if you don't have it, then a gauze handkerchief works.

Add 2 tablespoons of shio-koji to the tray and place on top of gauze.

Line the chicken wings on the gauze and cover with more gauze.

Add 2 tablespoons of shio-koji and let marinade for 15 to 20 minutes.

Cook in the oven and it's complete.

A reader informed me that if you let it marinade in the shio-koji overnight, it becomes even more crispy and juicy.
