I admit that some recipes can seem complicated—or have a step that makes us feel less experienced with the stove on 👩🏻‍🍳—but in the case of this dish, nothing could be further from the truth. Wild asparagus really pairs well with a multitude of ingredients. This recipe wasn't in my famous recipe folder 📚, perhaps because of its simplicity, but I believe it deserves a place in any respectable cookbook, because thanks to that simplicity, you get a dish that delights all diners.

Ingredients

Serves 4 servings
  1. 1 bunchwild asparagus
  2. 3free-range eggs
  3. 8small green onions, freshly picked from the garden
  4. Extra virgin olive oil
  5. Salt

Cooking Instructions

    Chop the green onions; remove the tough ends and cut the asparagus into 2 or 3 pieces.

    In a pan with plenty of oil, sauté the green onions with a little salt. Add the asparagus, and when they are slightly cooked, add the eggs. Break them up until they are fully set.
