Russian-style pie
The traditional recipe for this pie includes chicken, rice , mushrooms and a chicken broth in a pastry dome. I adapted it with fish and just a cover of pastry - less fiddly and tasted great. Easy to assemble if you have all the filling ingredients ready beforehand to layer.

The traditional recipe for this pie includes chicken, rice , mushrooms and a chicken broth in a pastry dome. I adapted it with fish and just a cover of pastry - less fiddly and tasted great. Easy to assemble if you have all the filling ingredients ready beforehand to layer.
Steps

Melt the butter in a pan and cook the mushrooms and onion until soft. Cook the rice. Poach the salmon pieces.

Peel and chop the hard boiled eggs and mix with the chopped dill and chives. Make the white sauce or open mushroom soup.

Roll out the puff pastry to the shape of your oven proof container - it needs to be quite deep so I used a casserole dish,minus the lid.

Start layering the pie by adding the egg mixture, then the mushroom/onion mix, white sauce, salmon and prawns and finally the rice/peas.

Season with salt and pepper

Cover with the pastry sheet and crimp edges. Brush with beaten egg or milk.

Bake in the oven at 180 degrees centigrade for 30-40 minutes. The pastry should be golden brown.

Cool slightly and serve with salad greens.
