Strawberry and Cream Cheese Ice Cream

I thought of making this when I had leftover cream cheese and cream from making cheesecake. I saw this in a cook book and I modified it to make it even easier to make.

Whip the cream until soft peaks form. If it is too stiff it will be difficult to pour into the tray.
Use any kind of jam that you like.
If you don't have a sweet tooth, reduce the amount of sugar to the heavy cream. Recipe by Igorin

Ingredients

  1. 100 gramsCream cheese
  2. 100 mlHeavy cream
  3. 2 tbspSugar
  4. 1 tbspLemon juice
  5. 60 gramsStrawberry jam

Steps

  1. 1

    Soften the cream cheese in the microwave and mix until it becomes creamy. Add the lemon juice and jam, and mix.

    Add 2 tablespoons of sugar to the heavy cream and whip until soft peaks form (it should fall back into itself when dropped from a whisk).

    Mix with the cream cheese and pour into a small tray lined with cling film. Chill in the freezer until hardened.

    Cut into small cubes and serve.
