Vegetarian Zucchini Sushi

I just love zucchini, so I'm always thinking of various ways to eat it.

You will have a lot of delicious juices left over from the zucchini after you fry it in Step 2, but don't throw it all away. Spread it on top of the sushi to finish, using a spoon. The sushi will look shiny and become even more delicious. It goes well with lemon juice and black pepper, too! Recipe by Mama fio

Ingredients

2 servings
  1. 5cm Zucchini
  2. 2rice bowls' worth Sushi rice
  3. 1Olive oil
  4. 1 dashSalt (preferably of high quality)
  5. 1Soy sauce with wasabi mixed in

Steps

  1. 1

    Slice the zucchini into rounds 2-3 mm thick! It's easier to shape it with rice if it's thinner.

    Lightly coat a frying pan with olive oil, and fry the zucchini from Step 1 on both sides. Don't forget to sprinkle on a little salt.

    Now you have sushi rice and zucchini to make sushi balls.

    Place a slice of cooled zucchini onto a piece of plastic wrap, and put a small mound of rice (bite-sized) on top.

    Squeeze and shape into a ball!!

    It goes really well with wasabi and soy sauce.
