Ingredients

35 minutes
  • 120 gsoft dates, pits removed (If the dates are not soft, soak in warm water until softened, drain)
  • 80 mltahini
  • 2 tbspwater
  • 240 grolled oats
  • 70 graw almonds, roughly chopped
  • 65 graw cashews, roughly chopped
  • 70 gpumpkin seeds
  • 20 gunsweetened shredded coconut (optional)
  • 1/2 tspground cinnamon
  • 1/4 tspsalt
  • 80 graisins or other dried fruit

Steps

    Preheat the oven to 150°C.

  2. 2

    Add the dates, tahini, and water to a food processor and blend on high until creamy.

  3. 3

    To a large bowl, add all the remaining ingredients and mix.
    Add in the date mixture to the bowl and mix with your hands until well combined.

  4. 4

    Spread the granola evenly on parchment-lined baking tray and press flat.

  5. 5

    Bake in the centre rack of the oven for 25 minutes, stopping one or two times to stir and flatten again if needed to prevent burning and to ensure the granola cooks evenly.

  6. 6

    When the granola is lightly golden, remove from the oven and let cool on the baking tray. The granola will continue to harden as it cools.
