I was thinking of ways to make some soufflé in a cup, since I just wanted to eat a small amount.

I was thinking of ways to make some soufflé in a cup, since I just wanted to eat a small amount.

Steps

Separate the egg yolk and egg white. Preheat the oven to 190℃.

Combine the egg yolk and sugar in a bowl. Mix with a whisk. Scoop 1 tablespoon of milk from the listed amount and add into the bowl. Mix well.

Add the cake flour and mix well. Mix in the rest of the milk, and add a few drops of vanilla extract.

Whisk the egg white lightly in a separate bowl. Add the sugar, and whip with a handheld mixer into a stiff meringue.

Add 1/3 of the meringue into the bowl from Step 3. Whisk until even and smooth. Switch to a rubber spatula and lightly fold in the rest of the meringue.

Pour the batter into the ramekins and bake for 10 minutes at 180℃.
