Caramelized Pineapple Suji Halwa
Cooking Instructions

Remove the core from pineapple slices. Sprinkle sugar, salt and rub on both sides. Grill them until golden on both sides. Remove onto a plate and keep aside.

In a pan heat 1 tbsp ghee and roast chopped cashews and almonds until golden. Remove onto a plate. In same pan take 1 tbsp ghee and roast suji until aromatic. Remove onto a plate. Roughly chop caramelized pineapple.

In the same pan take 2&1/2 cup water. Add in chopped pineapple chunks, cardamom powder, few saffron stands and let it come to a boil. When it comes to a boil, reduce flame and add pinch of saffron food color if using and stir. Add in roasted dojo and keep stirring to avoid lumps.

One rava is cooked and water is absorbed add in sugar and stir well. Mixture will become watery as sugar dissolves. Keep stirring until halwa thickens and leave the sides of the pan. Add in fried nuts and mix in.

Caramelized Pineapple Soji Halwa is ready to be served.
