Coconut and Strawberry Panna Cotta

A lactose-free Panna Cotta with coconut flavor and three textures from coconut milk, sugar, and dried coconut flakes. This is a vegan Panna Cotta, made with agar agar instead of gelatin, lightly sweetened, and ready in just a few minutes using microwave jar cooking.
Coconut and Strawberry Panna Cotta
A lactose-free Panna Cotta with coconut flavor and three textures from coconut milk, sugar, and dried coconut flakes. This is a vegan Panna Cotta, made with agar agar instead of gelatin, lightly sweetened, and ready in just a few minutes using microwave jar cooking.

Pour 3/4 cup coconut milk (200 ml) into a 2-cup (500 ml) glass jar with the agar-agar. Stir and heat in the microwave with the lid on for 2 minutes and 30 seconds at 750 watts.

Meanwhile, wash and clean the strawberries. Place them in a blender cup and puree with an immersion blender.

Add the coconut sugar to the hot milk and stir. Add the strawberry puree and the remaining coconut milk, and mix well.

Divide the mixture between two 2-cup (500 ml) glass jars. Close with the lid, seal, and clips, and microwave one at a time at 350 watts for 4 minutes and 30 seconds.

Let the jars cool to room temperature. A vacuum will form, allowing you to store them in the refrigerator for a few days.
