Kosai (Akara)

Kosai is a Nigerian fried snack made with beans. In the North, it is usually eaten in the morning with pap (kunu). However, during Ramadan, it is traditionally taken during Iftar.
It is very delicious and requires very few ingredients. #ramadansadaka

Cooking Instructions

Soak and deskin blackeyed beans. Wash and set aside.

Prepare mixed vegetables and add to beans.

Grind or blend together till you have a smooth but very thick paste.

Add salt and Onga (optional). Add little water if it is too thick. Beat the paste to incorporate air. This makes the Kosai fluffy.

Heat vegetable oil in a deep pan. Add in few slices of onion for flavour.

Scoop paste with a spoon or ladle into hot oil. Reduce heat. This will ensure even cooking.

Turn balls when one side is fried.

Transfer to a colander when both sides are fried.

Served with prepared pepper (Yaji) and pap variant of choice.
