Ingredients

  1. 3-4medium/large potato or sweet potato
  2. 1 Tbspolive oil
  3. 1minced garlic
  4. 1onion, chopped
  5. 1carrot, finely chopped
  6. 1bell pepper, finely diced
  7. 500 grground beef mince
  8. 1 Tbsptomato paste
  9. 3tomatoes, grated
  10. 1 Tbspvegetable stock powder
  11. Freshly grated parmesan or mozzarella

    Wash and scrub the potatoes well.
    Slice potatoes horizontally into 3-4 pieces (not too thick).

    Lightly spray a baking tray or cover it with a cooking sheet and place the potato slices. Prick each slice with a fork all over.

    Preheat oven to 200C. Mix the garlic with the olive oil and put it onto the potato slices with a brush. Place the tray in the over until the potatoes are fully cooked (test it with a fork).

    In a medium sized pan, fry the onion, carrot and bell pepper on medium heat until the onion becomes transparent.

    Add the beef and cook it while breaking up the mince with a fork or spatula.

    When the beef turns brown, add the tomato paste, the grated tomatoes and the vegetable stock powder, and cook until the sauce begins to thicken. (Add a bit of water if the sauce becomes too thick). Add your spices to it to your taste.

    Distribute the sauce evenly onto the potatoes, sprinkle with cheese and place into oven. Cook until the cheese melts and enjoy!
